“I am making Elderberry Wine!

I would say “I made elderberry wine,” but since it’s not in bottles yet, I consider the thing still in process.

But I can tell you that it is going very well.  This was my first attempt at wine-making.  I’ll tell you how I am doing it, after scouring a number of recipes online.

Update:  It turned out pretty awesome. It is so rich and nuanced, and has the character of a port wine.

Now we’re aging it in the basement to enjoy around Christmas time, over a year later.  We’ve been told that it just keeps getting better and better with age, and my main regret is that we didn’t make more!  But we’ll do a bigger batch this year, for sure…”

Self Sufficient Backyard

In all that time an electric wire has never been connected to our house. We haven’t gotten or paid an electricity bill in over 40 years, but we have all the electricity we want.
